<p>Thankfully the holiday season is finally over. I don’t know how many more dinners and holiday cookies I could possibly eat. <p>Saffron spice can also be added to grain dishes such as quick-cooking couscous.  Saute chopped vegetables that are in season, and serve it over a bed of couscous to which saffron has been added. <p>Saffron can be a flavor ingredient in salad dressings and mayonnaise.  Mayonnaise can easily be made from scratch in your blender.  Place an egg in the blender, and add some mustard.  Whirl it, and then slowly pour in a thin stream of vegetable or olive oil as the blender runs.  This will emulsify the mixture, making it thick and creamy.  This mayonnaise flavored with a hint of saffron is wonderful for use in sandwiches with seafood fillings or ham.  It can also be served as a dip with cooked artichokes.

<p><strong>Anise Seed Recipes</strong></p>
<p>1. Anise Sugar Cookies</p>
<p>For a great holiday delight, you can take a simple sugar cookie recipe and add anise seed to it to create anise sugar cookies. </p>
<p>Combine your dry ingredients, which would include 2 cups flour, 1 1/2 teaspoons baking powder and a pinch of salt.  In another bowl, cream together one stick of butter and 1/2 cup sugar until it is fluffy and smooth.  This step is most easily accomplished with an electric mixer, although you can mix it yourself with a pastry blender and <a href="http://www.starwest-botanicals.com/product/1-10-flat-whisk.html" rel="nofollow" >whisk</a> after the butter is softened.  After it is fluffy, stir in 1/2 teaspoon of <a href="http://www.starwest-botanicals.com/product/2-vanilla-flavor-extract.html" rel="nofollow" >vanilla extract</a>.  Mix the dry ingredients into the wet ones, and add 1/2 teaspoon of cinnamon and 1 teaspoon of ground anise seed at the end.  Because the dough will be very buttery and sticky, it is easiest to refrigerate the dough for several hours or even overnight, then proceed to shaping and baking.  You can take tablespoons of the dough and place it on a cookie sheet lined with parchment paper, then take a drinking glass with a flat bottom, dip the bottom in a little flour, and then press the cookies flat with that.  Bake at 375 degrees for 8 to 10 minutes, rotating the pans half way through to insure even baking of the cookies.  Take them out of the oven and let them cool on the baking sheet for several minutes before lifting to wire racks to cool completely.</p>
<p>2. Anise Seeds in White Rice</p>
<p>Another recipe to try is anise seeds in white rice.  This makes a wonderful and flavorful side dish to any curry or Thai food dish.  </p>
<p>To one cup of white basmati rice add 1 1/2 cups of water, and stir in a teaspoon of ground anise seed, and a teaspoon of <a href="http://www.starwest-botanicals.com/category/cardamom-seeds/" rel="nofollow" >cardamom</a>.  Bring this to a boil and then cover and let it simmer for 15 minutes.  Halfway through you can add dried fruit such as raisins or cranberries as well as toasted nuts like walnuts or pecans to the mixture and continue to cook.  Another simple idea is to eat anise seeds in white rice for breakfast.  You can cook white rice as in the proportions above, adding ground anise seed along with dried fruit and nuts, and after it is done cooking sprinkle with sugar and pour milk or cream, even soy milk, over the rice and serve.</p>
<p>Anise seed is a versatile spice, and one that will find its way into several different anise seed recipes.</p>

Extra virgin olive oil cooking spray</p>
<p>Heat the grill pan over a medium high heat for 3 minutes. Rub or sprinkle the chicken pieces with the chili spice rub on both sides and then lightly spray the pieces with the olive oil cooking spray. Grill the chicken for about 4 &#8211; 6 minutes on each side or until done.</p>
<p>Yield: 12 oz.<br />
Per 12 ounces cooked: 517 Calories; 10g Fat (16.2% calories from fat); 107g Protein; 5g Carbohydrate; 2g Dietary Fiber; 263mg Cholesterol; 338mg Sodium.</p>

<p>In a small bowl, mix together the chili powder, cumin, coriander, and paprika. Transfer the spice mix to a storage container until ready to use. Label and date the container.</p>

<p>Other anise seed recipes, such as the following, are used for preparing savory foods.  Rice provides a superb medium in which to feature anise seed.  Here is &#8220;Rice With Anise Seed, Nuts and Raisins,&#8221; adapted from the excellent Still Life With Menu Cookbook by Mollie Katzen:</p>
<p><b>Rice With Anise Seed, Nuts and Raisins</b></p>
<p>2 cups white basmati rice<br />
4 cups water<br />
2 tablespoons butter<br />
1 1/2 cups finely chopped onion<br />
2-3 minced garlic cloves<br />
1 tablespoon minced fresh ginger or 1 teaspoon dried ginger<br />
1 to 2 teaspoons anise seed, to taste<br />
1 teaspoon salt, to taste<br />
1 cup raisins<br />
1 teaspoon grated orange rind<br />
1 1/2 cups chopped nuts&#8211;you can use one or more of almonds, cashews, walnuts, pecans, lightly toasted</p>
<p>1.  Place rice and water in a pot with a tight-fitting lid.  Bring to a boil, then cover, and simmer undisturbed over a low heat until tender, approximately 20 minutes.</p>
<p>2.	Meanwhile, heat the butter in a medium-sized skillet.  Add the onion, garlic, ginger, anise seed and salt.  Saute over low heat for about 10 to 12 minutes, or until the onion is very soft.  Remove from heat.</p>
<p>3.	When the rice is completely cooked, transfer to a serving bowl, and fluff gently with a fork.  Stir in the sauteed mixture, along with the raisins and orange rind.  Sprinkle the nuts over the top and serve.</p>
<p>Yield:  6 servings<br />
Preparation time:  25 minutes</p>

It can either be purchased already pre-made, or if you prefer, you can prepare your own and vary the ingredients according to your own preferences. What follows is a basic recipe.</p>

<p>Combine these dry ingredients in a bowl and store in an airtight container in a cool, dry place. If using whole peppercorns, you&#8217;ll want to grind them first and base your measurement on that.  </p>
