Pear Cobbler with Cranberry Streusel
4 Bartlett pears
2 tbsp vanilla extract
1/4 cup brown sugar
2 tbsp all-purpose flour
1 tsp cinnamon powder
1/2 tsp nutmeg powder
Streusel Topping
1 stick (1/2 cup) unsalted butter, room temperature
1/2 cup brown sugar
1/2 cup flour
1 tsp kosher salt
1 cup cranberries
1/2 whipping cream (beaten)
Preheat oven to 350
Peal pears, cut in half through stem end. Use a melon baller to scoop out the core. Put pears in large bowl. Sprinkle with vanilla and toss. Then, sprinkle with remaining ingredients and toss to coat pears. Line the pears in a buttered, sugared baking dish, rounded side up.
In same bowl, mash butter, brown sugar, flour and salt with hands for streusel. Toss in Cranberries. Crumble topping mixture over pears. Bake 35 to 40 minutes, until topping is crunch and pears are very tender.
Serves six.
