White tea is the least processed tea. The leaves are simply withered and dried. White tea has a higher level of polyphenols that green tea. This tea brews to a light red color has a slightly sweet taste with no "grassy" undertones.

A Rare & Delicate Tea

Rating:
White teas are the least processed teas, thereby allowing the drinker to taste the most delicate essences of the tea plant. There are two major divisions of white tea - Silver Needle and Shu Mee. I have read that Silver Needle is the new buds of the same species of Camellia Sinensis that is used for all the other kinds of tea made. But Shu Mee is the new buds of another species of Camellia Sinensis. There are different teas made of this species too, but I have only ever seen Shu Mee offered for sale in the West. To my taste, Shu Mee is the softest kind of tea I have ever experienced. It is full of nuance. There are many green leaf flavors and smells. Silver Needle is more astringent; more in the direction of green tea.

I used to drink a wide range of teas but now have settled on Shu Mee alone. Starwest Botanicals is the only place I know of where I can buy it in bulk. I buy a pound every 2-3 months. What Starwest Botanicals sends me has been consistent for years. It looks just like the photo - small whole leaves, broken only by handling.

Good service nice product

Rating:
This tea is a bit rougher cut then the other tea I was drinking but when brewed it was a mellow comforting tea to drink. I am happy with the product and the service.
